Best Ever Potato Salad
If you think there isn’t bacon in this recipe.. then you thought wrong! Backyard BBQ, picnic, or any summertime gathering.. this potato salad needs to be THERE! So go ahead, sign up to bring it. Guests go nuts over it! I have yet to find one that even comes close.
Best part about a salad is that you can make it your own so easily! Keep what works for you, forget what doesn’t.. you won’t mess it up!
Ingredients:
5 lb bag of potatoes
1.5 cups of mayonnaise
3 tbsp of mustard
1/2 cup red wine vinegar (optional)
1/2 cup pickle juice
6 chopped green onions
1/2 cup chopped yellow or white onion
1.5 cups of chopped celery
2 tsp sugar
8 chopped dill pickles
2 tsp salt
1/2 tsp paprika
black pepper to taste
4 chopped hard boiled eggs
5 slices of bacon, fried & chopped
fresh dill, chopped
Directions:
Boil the potatoes until soft (but not falling apart.. you want the chopped pieces to somewhat keep their shape!)
Let the potatoes cool. You can stick them in the fridge for 10 minutes to speed this up!
I like to peel MOST of the skin off the potatoes once cooled.. but not all the skin. About an 80/20 ratio.
Dice the potatoes- about inch size cubes
The rest is just chopping and throwing in the big bowl! I like to chop the eggs, potatoes, pickles, celery, & onion in large (not fine) chunks. I think it adds great texture & crunch to the salad.
Add remaining ingredients and give it a toss!
Serve cold & with fresh dill on top because… fancy :)
